Cocoa (Theobroma cacao)

Theobroma cacao also called the cacao tree or cocoa tree, is a small evergreen tree in the family Malvaceae native to the deep tropical regions of the Americas. Its seeds, cocoa beans, are used to make chocolate liquor, cocoa powder, cocoa butter and chocolate.

From the dried and fully fermented fatty seed of Theobroma cacao, cocoa solids and cocoa butter are extracted which are the basis of chocolate. Cocoa butter, is a pale-yellow, pure edible vegetable fat extracted from the cacao bean. It is used to make chocolate, biscuits, bakery wares, pharmaceuticals, ointments, and toiletries.

Cocoa butter has a mild chocolate flavor and aroma. Cocoa butter is one of the most stable fats known, containing natural antioxidants that prevent rancidity and give it a storage life of two to five years, making it a good choice for non-food products.
