This simple Cucumber & Tomato dip is delicious, healthy and inexpensive to make!
Cucumber is one of my most favorite veggies. It's refreshing and low in calories and can pair with almost anything, plus it's fabulous for the skin.
Ingredients:
2 cups of diced cucumber without seeds. Peel the skin lightly and leave some behind for a touch of color.
1/2 cup of red onion finely chopped.
1/2 cup of tomatoes finely chopped.
1 cup of fresh parsley finely chopped.
1/2 cup of fresh cilantro finely chopped.
1/4 cup of sour cream or plain yogurt.
2 tsp of lime or lemon juice freshly squeezed
Salt and pepper to taste.
In a large bowl add the cucumber, onions, tomatoes, parsley, and cilantro and toss so all the ingredients are incorporated evenly. For a lighter version as the one shown in the picture, don't include the tomatoes. In a small bowl add the sour cream or yogurt, lime or lemon juice, salt and pepper, and gently mix together. Add the cream to the vegetables and toss until evenly incorporated.
